  1. Heat oven to 180deg C.
  2. Butter a bread loaf tin, about 10cm by 20cm by 5cm, well..
  3. In a mixing bowl mash the bananas well till smooth.
  4. Add and mix in well the melted butter.
  5. Add salt, baking soda, sugar and vanilla extract and mix well..
  6. Add beaten egg. And mix well..
  7. Add the grated carrots and mix in..
  8. Add the flour and mix until all the flour is in the mixture. Ensure no lumps..
  9. Pour the batter into the buttered bread tin..
  10. Place in the oven and bake until a skewer comes out clean. 45 to 60 minutes..

This loaf is moist, not over sweet, hearty and filling. I had made it several times with almond flour and it was delicious but I just made it with chestnut flour and I think I like it better with the.
