What a wonderful way to use ripe bananas! I was looking for a recipe to introduce more oats into my diet and this is great!

  1. Prepare 1 cup of whole wheat flour.
  2. Prepare 1/2 cup of cooking oats (Quaker oats) + a spoonful for topping.
  3. You need 1/4 cup of self raising flour.
  4. You need 1/2 cup of brown sugar.
  5. It's 3-4 of medium sized ripe bananas (I prefer full ripe ones).
  6. You need 1/2 cup of milk.
  7. It's 1/4 cup of cooking oil (coconut, rice bran, canola).
  8. You need 2 tsp of vanilla extract.
  9. Prepare 1 tsp of baking powder.
  10. It's 1/2 tsp of baking soda (if making muffins, add a pinch extra).
  11. It's 1 pinch of salt.
  12. It's 1/2 tsp of ground cinnamon.
  13. It's 1 tbsp of apple cider vinegar.
  14. It's Handful of chopped nuts or chocolate chips or chopped sultanas (optional).

Add oats and baking powder and blend again till homogenous. Whisk oats, flour, baking powder, cinnamon, and salt in a large bowl; set aside. Add in the mashed banana and Greek yogurt, stirring until no large lumps of yogurt remain. This recipe is made without flour, which means if you use gluten free oats it makes a nice gluten free bread recipe.

  1. Preheat oven to 350F or 170C. Lightly grease your tin with coconut oil (any oil that you have used)..
  2. In a bowl mix mashed bananas, milk, oil, vanilla extract and sugar either by hand or mixer on medium speed..
  3. In a separate bowl mix flour, oats, baking powder, baking soda, cinnamon and salt..
  4. Add the wet ingredients into dry ingredients, slowly until just combined with rubber spatula. Don't over mix the batter. Mix in the vinegar after this..
  5. Transfer the batter into your container (loaf or muffin moulds). Sprinkle some oats on top of it with some brown sugar for presentation. Bake for 25-30 minutes or till your knife or toothpick comes out clean (mine were done in 20 minutes so keep a check)..
