Ingredients of Banana Oat Loaf Cake
- Prepare of whole wheat flour.
- It's of cooking oats (Quaker oats) + a spoonful for topping.
- Prepare of self raising flour.
- Prepare of brown sugar.
- It's of medium sized ripe bananas (I prefer full ripe ones).
- It's of milk.
- You need of cooking oil (coconut, rice bran, canola).
- It's of vanilla extract.
- It's of baking powder.
- Prepare of baking soda (if making muffins, add a pinch extra).
- It's of salt.
- It's of ground cinnamon.
- You need of apple cider vinegar.
- It's of chopped nuts or chocolate chips or chopped sultanas (optional).
Grease and flour a ring cake tin. Blend bananas, eggs, oil and cinnamon till smooth. Add oats and baking powder and blend again till homogenous. Whisk together the oat flour, almond flour, cornstarch, baking powder, baking soda and salt.

- Preheat oven to 350F or 170C. Lightly grease your tin with coconut oil (any oil that you have used)..
- In a bowl mix mashed bananas, milk, oil, vanilla extract and sugar either by hand or mixer on medium speed..
- In a separate bowl mix flour, oats, baking powder, baking soda, cinnamon and salt..
- Add the wet ingredients into dry ingredients, slowly until just combined with rubber spatula. Don't over mix the batter. Mix in the vinegar after this..
- Transfer the batter into your container (loaf or muffin moulds). Sprinkle some oats on top of it with some brown sugar for presentation. Bake for 25-30 minutes or till your knife or toothpick comes out clean (mine were done in 20 minutes so keep a check)..
Add in the mashed banana and Greek yogurt, stirring until no large lumps of yogurt remain. I also used old fashioned oats in place of the quick rolled oats, and soaked them in the milk and applesauce while assembling the other ingredients (adding the oat mix with the whole raisins).
