Banana and berries loaf. This originally started out as a plain, but healthy banana loaf from one of my cookbooks. After getting fed up with making the same kind of banana loaf, and wishing to experiment, I came up with this one. I have not tried raspberries in this loaf, but I do wish to in the near future, which is why I'm putting it down as optional.
I did not add baking powder & it rose nicely. The bread is light & not dense @ all. In a large bowl, combine the first five ingredients. You can cook Banana and berries loaf using 10 ingredients and 9 steps. Here is how you cook it.

- You need of all purpose flour.
- It's of white sugar.
- It's of bircabonate of soda.
- It's of baking powder.
- Prepare of ripen banana mashed.
- Prepare of cranberries.
- It's of canola.
- You need of eggs.
- Prepare of buttermilk.
- You need of vanilla essence.
In another bowl, whisk eggs, sugar and oil until smooth; add strawberries and banana. Stir into the dry ingredients just until moistened. Add the berries and fold just until combined then scrape batter into the prepared loaf pan. Triple Berry Banana Bread is a fun, fruity twist on the beloved classic.
Banana and berries loaf instructions
- Pre heat oven 180 degrees Celsius.
- Sift your flour, baking powder, Bircabonate of soda and sugar and mix together.
- On the other bowl crack your eggs, vanilla essence and oil.
- The mashed banana and cranberries must be mixed with the dry ingredients and the eggs mixtures.
- Then pour that buttermilk on the mixture them mix all together using a spatula on this recipe.
- Mix until it's blends well together the is a consistent on the dough.
- Grease your pan and dust it with flour then pour the dough on the pan.
- Bake for 25 minutes and check the loaf using a tooth pick once it comes dry then the loaf is perfect then cool it.
